There is not a day that goes by that we don't get the "Have y'all tried freeze drying?" insert everything and anything you can think of, from every candy that has ever been made to just plain weird things like pigs' noses or worms. You are asking yourself, did kids ask these things? NO, adults every time. However, by far the most asked-about items are Peanut Butter and Chocolates. Unfortunately, neither of these items is a freeze-dryers dream
Peanut butter itself is a very high oil-based product. And even though it can technically be freeze-dried, it is not a quick, lay-it-out-and-get-it-done process. It needs numerous steps to complete, and forget about it if humidity is in the air. As a small business, we do not feel the process of freeze-drying peanut butter is a productive, cost-effective thing to do. Many homesteaders do not freeze-dry as a business and they can and will take the time to process, dilute, dab the oil, and freeze-dry peanut butter. Most will use it as a powder to use as flavoring on other products.
We however choose to mix peanut butter with other compounds such as marshmallow fluff, or simply substitute is for a peanut butter protein powder to give things that yummy peanut butter flavor. It is more cost and time-effective (for us) It all turns out delicious and gives it that unique crunchy texture. We have many products made in-house that we are certain you will love and get that peanut butter fix you are longing for.
Now, on to chocolates. Simply put! Chocolate just doesn't freeze dry. It only melts. You will see some items on our shelves and in our online store for purchase that do have a chocolate coating. However, they will always have a "middle" compound that is freeze-dry friendly. Does the chocolate still melt? Yes, once the drying process has been completed we allow plenty of time is a cooler area for the chocolate to firm back up. Depending on room temp, humidity, etc it can take upwards of an hour to firm. However, it is worth the wait. We also use chocolates and chocolate flavoring in many of our in-house recipes mixed with yummy compounds that will give you your chocolate fix.
I honestly think that is my favorite thing about this entire freeze-drying journey. With a lot of research and creativity, you can make the absolute most delicious one-of-a-kind treats. We strive daily to search for new products, experiment, and are always open to trying new things. Some turn out fantastic, some turn out to be perfect trash bag fillers :). Either way, the journey is fun, and im grateful daily for the opportunity to explore and create.
